The Eaglehawk Country House Hotel - Maldon 

Thank you for your booking at The Eaglehawk Country House Hotel - Maldon.  The hotel is a self catering and BYO venue however we recommend the services of renowned local chef Richenda Pritchard who will come into the hotel and cook you a meal served in the hotel dining room. 

Richenda Pritchard is a Maldon local and a qualified chef.  Starting her career at Grossi Florentino in Melbourne, Richenda then opened Delizia Cucina in 2005 achieving a one hat rating. Richenda relocated to Maldon in 2016 and has been cooking for locals and visitors to the town since.  Richenda started the Maldon cafe Miss Pritchards Pantry.  Most recently Richenda teamed up with Le Sel, another Maldon institution with a French flair. 

Richenda focuses on local and in season produce and she has catered for countless dinners, functions and celebrations at The Eaglehawk from 10 to 100 guests and provides a unique experience in the hotel Dining Room - hire your own private chef. 

Here is a sample menu from Richenda.  Your menu can be customised to suit your requirements so talk to Richenda and create a menu for your special occasion in the Eaglehawk dining room. 

Main course

  • Rosemary and garlic roasted Porterhouse, sliced to serve with mustards and horseradish. 

  • Salt baked salmon with salsa verde and lemon wedges. 

  • Roasted baby potatoes with rosemary and sea salt.

  • Heirloom tomato, and basil salad with olives and capers.

  • Green bean and asparagus salad with roasted peppers and pinenuts. 

  • Sour dough baguette and butter. 

Dessert - choice of one of the following:

  • Flourless Chocolate cake with ganache and fresh berries (doubles as a birthday cake), or,

  • Raspberry bavorois with rosewater and fresh berries, or,

  • Chocolate and hazelnut meringue with ganache and cream.
